Pasta with seafood

Pasta with Seafood is a delightful dish that combines the flavors of the sea with the comfort of pasta. Here’s a classic recipe for a Seafood Pasta featuring a mix of seafood in a light tomato and white wine sauce:

Ingredients:

  • 12 oz (340 g) pasta (such as linguine, spaghetti, or fettuccine)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup white wine (optional)
  • 1 can (14.5 oz or 400 g) diced tomatoes (or 2 cups fresh tomatoes, chopped)
  • 1/2 cup seafood broth or chicken broth
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 lb (225 g) shrimp, peeled and deveined
  • 1/2 lb (225 g) scallops
  • 1/2 lb (225 g) mussels or clams, cleaned and debearded (if using)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the Pasta:

    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Seafood:

    • In a large skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Deglaze and Add Sauce Ingredients:

    • If using white wine, pour it into the skillet and cook for 2-3 minutes until it reduces slightly.
    • Stir in the diced tomatoes, seafood broth, red pepper flakes (if using), oregano, and basil. Bring to a simmer and cook for 5 minutes.
  4. Cook the Seafood:

    • Add the shrimp and scallops to the skillet. Cook for 2-3 minutes, until they start to turn pink.
    • If using mussels or clams, add them to the skillet and cover with a lid. Cook for 4-5 minutes, until they open. Discard any that do not open.
  5. Combine Pasta and Sauce:

    • Add the cooked pasta to the skillet and toss to coat with the sauce and seafood. Cook for an additional 1-2 minutes to heat everything through.
  6. Season and Garnish:

    • Taste and adjust seasoning with salt and pepper. Garnish with chopped fresh parsley.
  7. Serve:

    • Serve the pasta hot with lemon wedges on the side. Optionally, sprinkle with grated Parmesan cheese.

Enjoy your delicious and flavorful seafood pasta!
